Banana Chocolate Chip Overnight Oats

Ingredients: 

• 1 tbsp olive oil 

• 1 frozen bag bell peppers chopped 

• 1 frozen bag carrot, onions, and celery 

• 1 can low sodium pinto bean 

• 1 can low sodium kidney bean 

• 1 can low sodium corn 

• 1 can low sodium fire roasted tomatoes 

• 3 cups low sodium veggie broth 

• 2 tbsp chili powder 

• 2 tsp oregano 

• Salt and pepper toast 

• Top with cheddar cheese 


Instructions:

• Add oil into a large pot on medium-high 

• Add both frozen bag of vegetables and cook until unthawed 

• Add drained beans and corn 

• Add roasted tomatoes but do not drain 

• Add in seasonings 

• Let it cook for at least 30 minutes 

• Top with cheese and enjoy!
